Class today was interesting. In that old Chinese curse kind of way. The chef instructor was back, but still sick. And on top of that, we had 4 out of 8 people back of the house. Only one of whom has worked the hot food stations on the line. So I moved over to saute and we had someone new on Grill. The guy that knew both was in the middle calling
