First peach of the season

I do this every year, for the next two months I'll be making pies almost weekly. I love fruit pies, and it's the season I can afford to do that. I don't usually, but I did this time because of the weather. And I had the bowl sitting on icepacks. It's important to keep the butter and fats from melting while you mix it.

yea, when i used to bake for Dunkin Donuts,
i always used as much ice as possible in the mix because we did 100 pounds of dough at once, and that could build up a lot of heat

There are pie cherrys at my local farmers market, on Sundays. If you come up and promise to bake me a pie, i will even buy the cherries.
Where are you going to get a better deal than that?
