Low Carb Fudge :)

Tried this recipe today- while it's not the same as marshmallow cream fudge, it is a nice, healthier option that is still very chocolaty and yummy. I quadrupled the recipe without any problems at all.  The troll's verdict will be in after he gets home from work :)

Low-Carb Fudge

makes 4 servings:

1 oz. Baker's chocolate (the kind with no sugar)

This is very similar to the WW truffle that I love. I thought of Tuge while I made these today for Thanksgiving.

1 small container of cream cheese (I use the light cream cheese by Stoneybrook. No corn filler.)
1 cup of powdered cocoa (Splurge and use the good Dutch brands)
1 cup of Splenda
1 teaspoon of whatever flavoring (Vanilla, almond is my fav)

Blend all the ingredients together. Roll into 24 balls. Roll in confection sugar or cocoa.

1 point each truffle. I don't know what that translates into carb wise.

Oooh that would be yummy with Rum extract... or just Rum.. lol
