I watch very little TV, and almost none of it actually on TV, but as a result, I think that means the few TV series I end up seeing on DVD later on are some of the better ones, because they're the ones I hear good things about and my friends buy or rent DVDs of and get together to watch. Series that have met that test in the past decade or so:

Six Feet Under
Babylon 5
Buffy the Vampire Slayer
Firefly
West Wing
The Wire

B5 & Buffy have this in common: They start out seeming weak, but if you make it through season one you begin to see how the long term plot arc and characters develop, and they get really really good... until the last season, which in both series was not as good as the ones before it.

(I have not yet seen all of Six Feet Under, The Wire, or West Wing, but I liked the parts I did see)

Another vote for Heroes and a vote for Battlestar Galactica. It's slow sometimes, but it's really great when you get into it.

CBS has taken to posting old Star Trek, Twilight Zone and Twin Peaks eps online, if that's your sort of thing.

My favorites:

Coupling (comedy)
It's Always Sunny in Philadelphia (comedy)
The Office (British version) (comedy)
Dexter (crime drama)
Peep Show (comedy)
Spaced (comedy)
Deadwood (drama)

Danny and Paul and Paul like "Rome", but I'm not really into it.
