On that note, I'm a brand new vegan and a fairly inexperienced cook (I just got my first "big girl" job about a year ago and just saved up enough to move out on my own after college). I also make the potato-spinach curry and pasta de los angeles from Appetite for Reduction quite a bit. Both make quite a bit, and are super, super tasty.

Frybread tacos are delicious and really cheap. This is the recipe I use, except I don't use any powdered milk obviously. I usually mix a can of black beans with chopped onions, tomatoes, lettuce, olives, avocado, cilantro and salsa. I know you want to veer away from breads and stuff but this is a good, yummy option if you're broke and/or feeling lazy that day :)
Stir fry some vegetables (I usually do peppers, mushrooms, onions and garlic; I add baby corn/bok choy/black olives if I have them on hand) and add some spoonfuls of Thai Kitchen brand curry paste and a half a can of coconut milk. Serve over rice or noodles, if you'd like.
Check out vegweb.com, too. There are so many recipes (all vegan!) and users rate them and review them as well. You can also add recipes to your "recipe box", meal planner and even a grocery list. :)

go to http://theveganstoner.com/. it's so awesome. most recipes have less than 7 ingredients and it's just easy. there are no measurements or quantities, you just throw things together and experiment for yourself.
i've made the chickpea curry, the peanut stew, and the corn salad sandwich so far. all delicious, all cheap and easy to make.
