What do you do when you have 6 cups of blueberries?


This is a Martha Stewart recipe. Surprisingly easy and very tasty.
Decided not to mess with making my own piecrust and used the Pillsbury refrigerated sort. Crust is prebaked so it doesn't get all soggy from the berries. Great, except the stupid crust likes to shrink and not cover the sides of the pie dish. Oh well.
The filling is SUPER EASY. Blueberries, sugar, cornstarch, lemon zest, and a pinch of pepper. Mix it up and smash about 1/5 of the berries so the juice mixes with the cornstarch and thickens it.



It's topped with a crumble, which is flour, brown sugar, and butter. Also super easy.

The filling was very very runny when I sliced the pie. Probably because it hadn't completely cooled. It doesn't slice neatly, and lands on your plate in sort of a blob of pie. It's still delicious, though!
