hehe... Perhaps if you are ever in my area of the country and you want to eat breakfast, I'll be sure to have them save you a pizza from the day before and I'll plate it really nice for you. :-)

I guess "quaint" kind of fits. Looks like the town I grew up in in about 1955. Very nice. I think being a silent partner in the restaurant would be better than actually having to run it. I think what you are is a one or two man Chamber of Commerce.
I do like quiche too and have tried that at other restaurants with no success... Something about it seems to make people tend to shy away from ordering it, yet when you take the crust away and call it a frittata, they order it... go figure. :-)
I probably will attempt it as a special a few times to see how it does before I would attempt to make it a regular menu item. Since the concept of the restaurant is Italian and Pizza, a quiche would fit into the "pie" theme of a pizza so it might sell...
Frittata works, Easier to keep too. No soggy crusts. Can't wait to hear how things go. What the heck, if it doesn't work, you are no worse off, and will probably learn a lot.
2 tb Olive oil 1 tb Chopped fresh basil Garlic bread 12 Eggs 1 tb Grated Parmesan cheese Heat olive oil in a heavy skillet over medium heat until very hot.
Beat the eggs with basil and cheese.
Scramble them quickly and lightly. Serve on slices of toasted Italian garlic bread.

Scrambled Eggs Italian-Style
(6 servings)
2 tb Olive oil
