Today's Culinary Lingo

Horchata
[hor-CHAH-tah]
Extremely popular in Spain and Mexico, horchatas are drinks made by steeping nuts, grains or CHUFA in water. They're usually lightly sweetened with sugar and sometimes spiced with cinnamon. Horchata.....well Cali is doing fine with this company. You might want to check it out.
The usual fountain displays are rice-horchata in a 5lb box, cup-to-a-gallon grainular state, hibiscus flower tea 4-to-1 concentrate gallon jug & timbarine in 4-to-1 gallon jug....plus others?

FYI.....also check out Chico's "local" Original Lemon Ice product....the best I've tasted in premix style......made in small batches....with fresh lemon juice. 4-to-1 concentrate 1 gallon jugs....
