I'm coming to realize more and more how...well, how pretty much impossible it would be for me to try and do this lifestyle change on my own. When it comes to changing my food habits, especially the way I use food, I have to be dragged kicking and screaming to actually make any changes. I'm glad to hear that your energy level is up! How did I miss that you quick your job? I'm glad that vegan is working for you and good luck with progressing your writing! :)

Thanks. I didn't really announce it, exactly. I still feel guilty about quitting abruptly and leaving us in the lurch, so I wasn't feeling up to shouting it from the internets. I'm starting to feel a little bit better about it, but also worried about finding more income. It comes and goes.

The diet is...well, it's still difficult at times. Mostly when at cookouts where there's lots of delicious meat and dairy-based salads, or at restaurants. Most don't have vegan options at all. But I think it's going to be worth it in the end, even the hard part of figuring out what to cook.

You know, the more I think about it... the more I am POSITIVE our parents didn't have to make decisions like this. Hah. Well, maybe they just didn't shout them to their kids. Mental health is JUST as important as physical health.

I found that one side of the family's barbecues became very diet friendly after a heart attack and diabetes in the family. There's a lot of fresh fruit instead of desserts and smaller burgers and buns.

Vegetarian can be hard to find, I can only image vegan at a restaurant!

I'm glad to hear the diet is going fairly well so far. Just remember your friends are certainly willing to help out. I can understand quitting from Call Tech it is run horribly overall and to me it made me contemplate why in the world I was there and made me hurry to find other work. I'm not sure if Nyte necessarily planned it so he would put this diet out there because he didn't get on you about quitting though. I think it was more because he has been wanting to have a healthier diet overall. Granted it seems in my view what he feels is good and bad changes a bit over time. Also, I think going Vegan helps reduce costs as I've gotta imagine taking meat out of the picture certainly can save on money.

Nyte just got lucky with the timing, I think. I have no idea what will be the "healthy" thing next, but I imagine the garden will play a big part of it. He's been leaning toward growing our own food, but if he comes home with a big bag of wheat and a millstone, I'll have to put my foot down.

A lot of the changes just come from trying to learn more about what's in our food, new research about how the body works, and of course, a lot of trial-and-error on our part. I happen to believe that everyone is going to need a slightly different take on "healthy" just because we all have different metabolisms and tastes and dietary needs. It's easy to forget that when you have so-called "experts" telling you that if everyone would just throw all the cupcakes in the world into the ocean and just eat peanuts, every disease would disappear. It's far too easy to get carried away, so I apologize in advance for the next time Nyte gets too excited and starts to lecture. Lecturing runs in his family. :)
