Ooh, please report back if you do! (It's not my favourite cake of all time because it's rather on the sweet side for me, but that doesn't stop me eating it. The getting-rid-of-carrots thing helps.)
This sounds absolutely delicious, and it also finally provides me with an excuse to buy a new knife attachment for my hand-held mixer after I threw out the last one because it was hiding under the remnants of a gutted pumpkin. Cake AND new kitchen appliances, now that's what I call win-win!
And for the ridiculously daft question, I've never done any buttercream icing, how does that work?
1. I feel guilty; should have posted ages ago. /o\ 2. Bloody pumpkins and their evil plots. You can't trust them for an instant. And yay for new gadgets! 3. Really?! You just mix icing sugar and margarine; that's all there is to it. I don't even know the proportions; I just go by "a glug of sugar and a blob of marge". So, er, perhaps it would be better to look up a proper recipe, cos mine's not up to much. XP
1. Aww, no! It's your journal and you're free to post whatever you like. Doesn't mean, of course, that I'm not happy about any food post you might want to make.
3. *blushes* Yeah, I'm not much of a baker. It might have something to do with not having any baking tins available. Must rectify this immediately. But if it's that simple I can just see for myself how sweet I want it - most of the time I don't stick to exact amounts in recipes anyway.
