fry 1 medium onion in olive oil until soft but not brown,
Add pumpkin flesh, a generous litre of water, and 2 chicken stock cubes,
simmer for 10 minutes, then allow to cool slightly before liquidising.
Push through a sieve to remove any fibrous bits, then return to pan. Reheat, adding some seasoning and lots of fresh nutmeg.
I used a small pumpkin, and this made enough for about 5 servings.
