Had a pretty unremarkable week, not much out of the usual.

We've booked a holiday, as in actually paid a deposit and booked a holiday. This is highly unusual for us, since we usually make plans and never bother going through with them, but no, we decided that if we didn't book it well in advance, we'd never get around to going. Yeah! It's still sat there in the veg basket challenging me to make something remotely edible from it. I was thinking of soup, but I haven't got around to looking for a recipe yet. I was thining of roasting chunks of it and adding chillies to it...but that's as far as I got. Your recipe would be appreciated, ta.

Bake pumpkin in a covered dish, dotted with butter,
fry 1 medium onion in olive oil until soft but not brown,
Add pumpkin flesh, a generous litre of water, and 2 chicken stock cubes,
simmer for 10 minutes, then allow to cool slightly before liquidising.

Push through a sieve to remove any fibrous bits, then return to pan. Reheat, adding some seasoning and lots of fresh nutmeg.

I used a small pumpkin, and this made enough for about 5 servings.

That sounds good...I'll give it a try. I've got loads of homemade chicken stock in the freezer that needs using, another reason why I thought of soup.

And I work at Cafe de France. You know the one opposite Oxfam, next to the florist?
