Mmmm, bread! I've always been too intimidated to try to make sourdough starter, was it easier than you thought or was it super complicated?

it was super easier than i thought. all i had to do was remember to stir it and feed it. totally not a big deal! you should definitely try it. i think that the tricky factors are finding a good wheat flour to start with that has enough naturally occurring yeast and bacteria stuff, and then not having super chlorinated tap water. it took me about a week before the starter was active enough to use, so it takes some time, but it's really not hard at all.
