Recipe: Chicken Thighs with Tomatoes, Olives, and Capers

Sounds really tasty! Leftovers are the bomb biggity! I totally didn't think to cook rice in chicken broth instead of water..I'll have to try that out the next time I make rice!

Oh, it was great for lunch afterward. We even had enough left over for Amber to take for lunch, too.

Chicken broth adds a bit of flavor to rice. I really like it with basmati rice. Mmmmm ... this probably means I need to be a little braver and more experimental.
