Little notepads/mini notebooks work well. Tape recorders are a pain in the butt since they involve re-listening and transcribing and that is very time consuming.
I dunno... you may be able to get the kids to talk more on little things--what they miss about home, what they like or dont like about the US, old and new houses, schools, food, connections to family, places they would like to visit in either country, what and where they would like to be when they grow up... Things that you can draw conclusions on, without it being "work" to the kids. Granted, I don't know what age you're dealing with either...
