Happy birthday. Even though you're not keen of birthdays, I hope you have a good one. What is the difference between American and English cakes? I ask because I usually have the American type (living in California, and all), and it is very special to eat cakes and pastries when I travel to Europe.
The differnce? English sponge cakes are made differntly. I'm not sure how, but I am told some of the ingreedants used are differnt. The result is American cakes are a LOT lighter and moist, as in texture - both sponge and iceing. And sweeter flavor too. To us, American cakes are more like a sort of gateau, than a cake. Our sponge isnt hard, as such, but you're hard pressed to find a nice moist english sponge cake.
I don't think I've explained very well... I hope you can sort of get what I mean?
