I don't think that's giving up, as long as you only do it sometimes. Think of it this way: at some point he'll have to grow up and learn to eat and clean up on his own, so this is just one example of giving him the chance to learn how to do just that. He'll almost certainly make a huge mess and be strongly resistant to cleaning it up the first several times you do this, but over time he'll understand actions and consequences and he'll learn how to eat and clean up on his own. If you always watch him like a hawk to prevent messes and always clean up for him afterwards, it will be harder for him to learn those habits.
You be surprised. My son many times comes to me when he has made a god honest mistake mess, like spill a cup. He loves to clean up afterward. OKay, maybe not loves, but he is a good OC boy!
This issue was more on .. him taking his bottle and realizing it dribbles milk, and then making art w/ it. or lining up the drops around the table. :P He does like to 'make a mess' sometimes when I let him out and he wants to take sink water and use it for his mud pies outside. :P Water from bathroom to backdoor. Gaw! hehe.
