Me personally I'd marinate it in red wine, olive oil, pepper, a small bit of ginger, bay, rosemary, and basil for about a day rotating it frequently. Pan sear it with brandy just before you roast it so that everything it's been marinating in is sealed in, then roast it like usual brushing it with the marinade. I'd also add potatoes, onions and carrots to the fray as well. ...and bake a couple of large beets rubbed with butter and spices in tin foil.

You are far too precious..heh, I've never served that one up like that..but I like the idea. *snicker* That's right you don't know about my prowess in the kitchen. It's been a long time since I did a recipe share on my journal and don't have the time as much any more to make good with some of them unfortunately. My man is very spoiled he gets that kind of cooking regularly believe it or not.
ha ha! What goodly piece of meat. (I am such a sucker for buy one get one free and those 10-for-10 deals) My family and I are massively carnivorous, and my fella' has lived mostly vegetarian. We are having a good affect on eachother's eating habits

ok, what i would do? brown it in olive oil.
put it in the crockpot with some water, onions, some cr of mushroom soup, onion soup mix, whatever you have.
serve with cooked potatoes, carrots, and biscuits. yum!
