I made low-carb pancakes. They did'nt even make me want to puke either. Eggs, ricotta cheese, salt, and soy-protein isolate. They look *exactly* like pancakes. The texture is a bit spongier, but for the most part a far trade ( Read more... )

Heya can you please send that recipe and anymore yummy ones you may have that are low carb? I would appreciate it.

I will send some prayers back your way regarding your job status. I am not in your home or financial situation, but after reading what happened at your old job I would probably be getting a job at Mc Donalds first before going back there. Being humiliated is not fun. I wish men bleed our their ass once a month and had issues like that. Maybe they would be a bit more sympathetic. Ya think?

The recipe calls for

3 eggs
1 cup ricotta cheese ( I used fat free - all I had )
1/4 soy protein isolate
dash of salt

mix it all together until it has a pancake batter texture, you'll need to whisk it. You may want to add some water to thin it out.
Pour mixture into hot oiled frying pan. Make sure they are the size of traditional pancakes. Flip once they bubble on top. Cook on the other side until done. Top with butter and sugar free syrup.

Newbee at this low carb thing...Where do you get the soy protein isolate?

I got mine at a health food store. You have to make sure it's soy protein isolate, though. Don't be afraid to shop around, as the prices are high on it. The pancakes are not awesome, just a decent sub. I did make a meatball casserole last night that was awesome. Are you doing South Beach or Atkins, something like that?
