On the aging of marshmallows

I am left wondering what might be the outcome of canning marshmallows. Or, indeed, freeze-drying them..

Hmm. Well, as I understand it canning involves a fair amount of heat, presumably to ensure that any bacteria or mold spores attached to the food get killed off. (Wouldn't want to open a can of mold, right?) So I think the marshmallows might get melted, which I think would defeat the purpose of canning them.

And I'm not clear on what the point of freeze-drying marshmallows would be - dried marshmallows? That would have to be rehydrated to soften them up again? Oh, wait, isn't that basically what the marshmallow bits inside cereals like Lucky Charms are? They do soften up after soaking in milk for a while...

Now I'm wondering how well simply freezing (not freeze-drying) the marshmallows would preserve them. Let's stick a bag of marshmallows in the back of the freezer and find out!
