I haven't taken the time to figure out how to do it, but I have a professor friend who has his fb profile separated into various levels of privacy according to who he wants seeing what.

Also, if there are just a few people you don't want seeing your profile, you can search their name and block them from ever even seeing your profile. (I've done this with three people I do NOT want in my life any more than they have to be.
