You have impressive restaurant karma. Omar's is, in fact, one of the Grand Old Restaurants of Ashland (it was there when we first started going down, in the early '70s, and has been one of our semi-regular stops when we visit). I don't believe we've ever been to the Tollgate Inn, but that's also one that's been there forever. Jake's Grill, OTOH, is of fairly recent vintage, though the hotel in which it's installed (the Governor) is one of the city's oldest, now elegantly restored. It's run by the same group that's taken over Jake's Famous Crawfish down the street -- and that Jake's has been in business for over a century (if it isn't the oldest continuously operating restaurant in Portland, it's very close -- the alternate might be Dan & Louis' Oyster Bar nearer the riverfront, which is still in the hands of the family that founded it).

The restaurant karma is called....Yelp. Also TripAdvisor and a new one I stumbled on, UrbanSpoon. If a restaurant showed up with good ratings on all three of those, it was a fairly safe bet. ;)
I live 16 miles east of Sandy, love the Tollbooth, but Calamity Jane's uphill about a mile is better. My little village is actually a resort town with access to both golf course and an easy drive up the mountain for winter sports. We've got the rural feel with doctor, dentist, grocery store, post office right here. But mostly we drive into Sandy for bigger shopping expeditions. You probably passed through here on your loop drive. But be prepared 90 inches of rain a year doesn't leave a lot of days of sunshine. But then I'm badly photophobic and love it. <-:
Listen to the rhythm of the falling rain and learn to love it or stay off the mountain. Portland and the valley only get around 45 inches of rain a year.
I used to drive up to Oregon fairly frequently. There is a safari park near to Roseland that is nice. If I manage to travel that way again I will definitely go to the cat park.
If you move up north, I will have to come visit. You have great taste in rural locals.

it weeds out the weak, and most of us know the side streets or smaller byways off of I-5.
