Allergies are actually caused by the body's immune response. If anything, you being healthier means your immune system might've been sitting around bored and decided to find something to do. Mainly make your life hell.

I've heard it has to be local honey, since bees and pollen go together, and you most likely have allergies to pollen in your area.
