I barely eat any meat mostly because I was a vegetarian for a long time, and my dude still is. It is harder to fill up because protein makes you feel full, and meat has so much of it. Both of us eat eggs almost daily. If you can find yourself some decent methods of preparing tofu and beans, that helps. I'm still working on that one. I do make a lot of bean-veggie soups. I've been meaning to find a good dal recipe (lentils). It is crucial for me to find protein to eat because otherwise I eat way too much bread and sweets. Find a veggie burger brand you like, those help. Even better, find a recipe to make your own. I haven't found the perfect veggie cookbook yet - the ones by Mollie Katzen are good but not really for everyday cooking. Oh, hard boiled eggs are great, too.
