i do mine sugar free as my MIL is diabetic. They still keep for years even with out the added sugar. I just use water that is just off the boil for mine. seems to work nicely :)
From what I read, it sounded like you made one jar and then ate it right away....Why bother putting them in a jar (rather than your mouth!), if that is the case?
I did only make one, but I had good reason! I'd never canned peaches before, and wasn't really following a recipe, or using all the proper tools, so I wanted A) make sure it actually tasted good and B) make sure it sealed okay and everything. After I made sure of that, I would feel better about doing the work on the rest of the peaches (which actually only made one more jar, but it's waiting in the pantry for a unavailable-fresh-peach-day.) So yeah, two jars total, one at a time, but I'm all set for when I can buy BUSHELS! (Well, except I'll need a bigger pot and more jars...)

So yeah, two jars total, one at a time, but I'm all set for when I can buy BUSHELS! (Well, except I'll need a bigger pot and more jars...)
