So. I'm necessarily getting back into cooking again. I was never terribly good at this in the first place, and I've forgotten quite a lot of what I knew ( Read more... )

Try the vegrecipes community, or www.recipezaar.com is great.
We use a lot of Quorn which some people hate but it comes in so many varieties and you can just do whatever people do with meat so you can alter meat recipes as well as making your own stuff. Also, there are sometimes easy recipes on food packets - we made a nice chickpea and kidney beans chilli from a veggie gravy box recently. Good luck!

I like quorn, but tofu is cheaper ;) I guess I should look at things I can do with quorn mince - bet there's quite a few!

One of the major overall principles is to cook slowly at a moderate temperature; bringing things to the boil is one thing, leaving them there is a bad idea for everything that is not grains or pasta. Another is to make sure that onions and garlic have slow-cooked to softness before you add anything much else to them.

I'll bear that in mind! Many of my previous experiments involving garlic were less than successful.

ooooh, yes. p.s. the versatility of the baked potato is not to be underestimated.

also, also, curries: fantastic, because you can make a fuckton of it and store it in the fridge. they also normally taste better over time.

also, also, also, lentils: great for padding out curries, or anything else. i've thrown them in lasagnes.

*grin* I can just about manage curries!

My last baked potato was a disaster! I'm not sure whether it was because the potato was really old, or whether I simply didn't cook it long enough. I didn't prick it with a fork either, but it did get an hour in the oven overall. It turned out really hard and my stomach didn't totally appreciate it. Hmm.

That mushroom/garlic/chilli thing sounds lovely! I'm totally going to try that tomorrow, if I've recovered enough!

Thanks! Thanks a whole bunch. I will so try these when I get a chance. And I do remember the resturaunt! I just didn't remember the recipe, heh.

Haha, I really can't say about endurance until I see where I'll be living. I guess no if I have to go back to the cooker all the time, yes if I can perch on a stool and read or tap at a laptop? So probably yes. You may as well go for it then I can give it a shot when I can and it'll be preserved until then by the magic of the internet!
