Calzones

So last night I ventured to try out a new recipe. I sort of loosely followed the recipe in a cookbook for calzones. This meant I made the dough in our bread machine, using a cross between the recipe suggested in the book and the recipe out of my bread machine cookbook. I think the cheese layer from lasagna might be good. Mix cottage cheese, Parmesan cheese, and oregano. (And cheddar)

You know, now that you mention it -- the recipe did call for ricotta, which we did not want to add. But I do recall hearing that cottage cheese is a common substitute for ricotta. Wish I'd remembered that. We actually had cottage cheese.

I have been experimenting with calzones too! Struggling with the bread though... They kind of end up looking like lumpy criss-cross pies.. :)
