Tonight's dish: gluten-free baked mac n' cheese

Tonight I kicked off the cooking initiative with a gluten-free baked mac n' cheese of my own design (well, heavily influenced by a number of other recipes I found). It came out tasting good, though it needed a bit more cheese, a bit more salt, and a bit less milk.

Do you or Beta like potato soup at all? If so, check out Alton Brown's Potato & Leek soup from the Food Network online. It's my favorite soup, wonderful for snowy/rainy evenings and gluten free as far as I can tell.

Get thee to your local Trader Joe's!

They don't have elbows, but the penne is great for Mac and Cheese.

(If you're feeling lazy, they also have gluten-free boxed mac and cheese)
