Guacamole - Just in time for Cinco de Mayo!

Guacamole can be either really bad or really good, and funnily enough until I had to make it at work (I am a cook, and have celiac.) I never knew how good it could be. My guacamole gets the Latin American Sous Chef compliments when I make it! (I'm about as gringo as gringo can be!) At which point, he points them to me! Happy Cinco de Mayo! Hope you
