Does anyone have a sugar cookie recipe that they have actually made that holds together? My son's kindergarten class is decorating cookies on Halloween, so I want to send him in with some of his own.
yep, just the sweet rice flour. I love using it for cookies because of it's mild flavor and refined texture. It honestly doesn't even need the xantham gum, but it's a good idea to use it for just-in-casies.
This is similar to a snickerdoodle recipe that I love, as well. It is impressive how close to regular snickerdoodles it tastes (my husband says even better).
Please, please, please remember that if he's decorating cookies with his whole class, most likely there will be double dipping in the frosting. Once a knife/spreader is used on a glutenous cookie and then stuck back in the frosting, the frosting will be off limits to him. =(
*also* in addition to above - check the icing sugar they're using to make the icing!! most icing sugars (especially the cheapest ones, which the school would go with most likely) contain wheaten cornflour.. only pure icing sugar is the way to go.
so maybe you should send along a container of icing too? (or frosting as you guys in America would say!!)
If you're really, terribly stuck, marshmallow Peeps do seasonal shapes other than the ubiquitous Easter chicks- and they come with the decorating things in the package. I believe they're clean, the ingredients looked okay last year (but we all know what that means).

(and for some Americans, icing is completely different than frosting ^,^ at least it is where I grew up in the Midwest!)
