Out of curiosity what is your bread recipe? *curious* I often play with mine and always enjoy examining someone-elses recipe ( who obiously is succeeding ) =)
Oh and I forgot to mention, next time I bake, I'm going to add a package of clear flavorless gelatin to the dry mix. It's worked really well for me in the past baking large layer cakes in making breads a lot less crumbly, it kind of replaces the gluten along with the xanthum gum.
