Here's the thing about you making cookies for your friend. If you've ever had your pans, spoons, bowls, etc. touch gluten foods then there may be a chance that you can cross contaminate your friend with the cookies. Sensitivities seem to vary, so it's best to be as careful as possible. Use disposable everything to make the cookies if you can. I once had to bake gluten containing cake for a friend's birthday in my kitchen and I used a bowl that some fruit came in, a throw away spoon, and a disposable pan. Thankfully it was a mix so I didn't have to use my measuring cups.

It may be in your best interest to ask your friend about their sensitivity.

I liked these and its pretty simple. I used dried cranberries instead of dates though.
