Sometimes I have imaginary arguments with my friends (note the placement of the adjective there please). Friends I haven’t seen in quite a while sometimes pop into my brain and start telling me things like which shirt I should wear or how to cut my carrots. I will defer to your judgement on science writing, but your characterization of literature is an inaccurate generalization. For every Augustine, there is a Thomas Aquinas whose precise and minimalist use of language is incredible (and very boring).
There are certainly works of prose that "hide behind language," but those probably aren't very good.
This topic is a bit confused, perhaps, because you are comparing apples and oranges. You are comparing literature to science articles. A better comparison might be literary articles to science articles. While I'm sure there are plenty of terrible articles out there, I think most people would agree that any article in any journal should be as succinct and elegant as possible.
