Your favorite recipes with fresh oregano and sage?

I just received a large quantity of fresh herbs and was looking for some cooking inspiration. I would appreciate getting recipe ideas from you for using fresh oregano and sage. Thanks for sharing.

Fresh herbs, yum! I would simply chop some of the oregano and sprinkle it on a salad, or drop it into a homemade vegetable soup. A rule of thumb is to use twice as much fresh herbs as you'd use dried because the flavor is less concentrated with fresh.

One of my friends makes rice stuffing with sage and that's really good.

I like to use fresh oregano in this "spring pasta" I make. I use wheat penne bc it's my favorite. Simple start the pasta to boiling and while you're doing that put olive oil in a pan and sautee some chopped garlic. (I like lots, but some don't) add in fresh green beans. (about 2 cups) Once the pasta is finished add that to your green beans, garlic, oil mixture in the pan. Stir it so the oil and garlic and beans are all nicely combined then you add about a cup of ricotta cheese and the heat of the pasta and other ingredients helps the ricotta "melt" (as much as ricotta really melts). If you halve grape tomatoes or cheery tomatoes, add those in and then fresh oregano and other Italian spices to taste. It's delicious and a great pasta dish for warm weather because it just tastes light and fresh.
