I have found in the past that if done well, the salty flavor of the bacon works great with the sweet of chocolate. Seems like it shouldn't, but it does.
I don't have any recipes though, so this comment probably isn't much help.
Bacon fat chocolate chip cookies. Take a normal chocolate chip cookie recipe and use half butter, half bacon fat for the butter part. Add dark chocolate to balance out the the flavors.
Its my sis' most popular cookie when she sells them at the farmers market!
I know Smithyfield bacon produces A TON of fat when you cook it.
It really doesn't give a bacon taste, Sis says its more a smokey/salty taste. I have not tried it yet, as I'm still expecting a box of cookies from her soon as part of her shipping test.

Still, I will try it with my fail safe choc chip cookie recipe, since it'll be the best and easiest to compare to.
Now I just need to make 3/4c of bacon fat for both recipes...
