Freezing milk

What usually forces me to the grocery store is the lack of milk. What keep me from buying more than about three gallons at a time is the generally constant week and a half into the future expiration date. This time, I bought an extra gallon and stuck it into the freezer. It turned distinctly yellow. Hmm.

It goes un-yellow when it thaws, but I've always felt like the texture of it gets changed somehow by the whole process. I generally just look through the dairy case for the ones with the farthest expiration date. It can be up to 2.5 weeks around here.

My aunt regularly freezes milk and then thaws it out to drink. I don't think I'd want to drink it straight, but its fine in cereal and stuff.
