R. Scott Bakker has written a fantasy series (well, two now) which feature a Nietzschean Übermensch as the central character - a mystical individual with a faultless (and practically unstoppable) will to power.
I can't recommend these books unreservedly as there were certain aspects of them I found odious, but they're interesting. I should also mention that the setting is pseudo-fantastic, closely based on the history of the Crusades with the names changed and supernatural elements added. But there is recognisable Western European petty nobility, decadent Byzantine royalty and Saracens etc.
