because I am the only vegetarian anyone I know knows (sigh), I have just rec'd request from one of mr p's work buddies for some cookbook recommendations + general cooking tips now that he has been put on low cholesterol low fat vegetarian diet & his pregnant wife has been put on high-protein/low-carb diet (I know she failed her 1-hr glucose test, ( Read more... )

heya
wild rice is the best best wrt low-carbing. white/brown is pretty much out.
is the wife also vegetarian?
i can help with recipes if you need, i follow a diet similar to most diabetic diets, although not vegetarian.
some things to avoid-----starchy vegetables, rice, pasta, grains, raw sugar....

damn, I guess my comment from last night didn't go through.

it turns out that I was misinformed -- the husband is going veg on medical orders, but the wife has no desire to join him, so since they're going to be eating separately, I can carb away!

but thanks! at least I know a little something about it now.

OMG, I am the authority on the gd part of this diet!!

With gd, they are even more strict than with regular diabetics. The beans are even pretty much out, except for like 1/2 cup cooked as a serving. Too much starch, and starch=sugar=high blood sugar=bad.

Rice, brown or white is ok, as long as you eat 1/3 cup cooked only as one serving. Peanut butter, but only the all natural kind. Others have too much sugar. Also, nuts are good for the protein and fat serving. With GD, snacks are crucial, and I highly recommend these:

Oh jeez, I could write a book. It is all about serving size and spacing meals out to keep sugar levels stable.

ok, like I told mere, I was misinformed about their needs & I don't actually have to give any suggestions to her, since she's not planning on going veg with her husband.

she's a doctor, actually, so presumably she has a good grasp on the whole gd diet thing, but I am totally going to pass on your snackbar recommendation to her!

I posted the black beans in foodlove a little bit ago. will post/mail tahini sauce later today, when I get a chance. brown rice, you're on your own -- I can't cook it to save my life. mr p ALWAYS has to triage the brown rice.

god, I need to. I suuuuuck at rice. the thing that stops me is who has space for ANOTHER kitchen appliance, yk?

I eat a primarily plant-based diet (vegan for 7 years, but not for the last 3-4 yrs.) I had gd during my pregnancies, or at least my first. At that time (1990) I was eating a bit of meat and drinking way too much cows milk. (Personal opinion here)...I hate the low carb fad, but would have to type half a page to say why. This is such an interesting topic you bring up and I'd love to dialogue at length about it. I love talking with other vegetarians but alas I have to go to the bank before it closes. Darned bank! %&*$#&&!!
