Strawberry Pie

From our twenty-two pound haul at the u-pick, I've frozen sliced berries, put up jam, made strawberry bread, had shortcakes, ate them fresh at breakfast, tucked them in with lunches and, most recently, I did a pie. It was light and fresh, perfect with homemade whipped cream. A little 'loose', but I'll tweak the recipe in the future.

You had a lot of strawberries. I got about 6 quarts earlier this week. Made freezer jam, strawberry crumb cake, smoothies, just ate some as is, and froze a bunch. I have just under a quart left which will make a couple more smoothies and maybe another baked good.
