I'm a big believer in using acidity or salt to sharpen and elevate flavors. I also think it's important to have contrasts to 'round out' a meal. Because Thanksgiving is typically a lot of soft, heavy, rich foods, we make it a point to bring in a few fresh or crunchy elements. Oh, I don't have a recipe but a good thing I cooked recently was meatballs (seasoned like you would stuffing) which we ate on rice with roasted brussels sprouts and lots of cranberry sauce. I saw a recipe somewhere but didn't print it out and just winged it.. it sounded weird to me but it was really good.
