Mushroom Risotto

I love risotto, but I seldom make it because it requires a lot of active cook time. You can't leave it unattended....must stir, stir, stir. The reward, of course, is that it transforms to become this velvety, luxurious entree. A few years ago I decided - some insane whim - to make Swiss chard risotto for ten people. I discovered online that you CAN make it partway - cook about five minutes - then turn it off, and finish cooking it when ready to eat. It worked rather well.

I love eating risotto but I hate making it. Still every so often I want it bad enough that I'll make it. Mushroom risotto is my favorite!
