The word 'vegetarian' rattles some of you. You might be firmly in the we-have-bacon-so-why-would-we-bother-with-tofu camp. I totally get that. Trust me. I do. I like tofu, actually, but I have problems with it falling apart when it's heated. I have a great recipe for a kimchi and tofu soup that calls for silken tofu, which crumbles when I try to stir the soup. Not so attractive and the silken aspect is lost.
