Frozen Peppers

Mr. Jack Frost came in the night & claimed all the peppers off my red bell pepper plant, leaving them soft & soggy. Now I'm wondering of any good ways to deal with them now? I could throw 'em to the birds, but thought I might check here first?

do you have a dehydrator? I know my folks tend to use it for veggies that have gone soggy, makes them into dried versions which can then be soaked to re-hydrate for recipes or used dried.

You can use them in anything that calls for COOKED red bell pepper. Or whirl them in the blender and add them to spaghetti sauce, or slice them and add them to a lasagna, or process them with hummus to make red pepper hummus.

I second this. I freeze strips of bell pepper and use them in stir fry, or for italian sausage and peppers, fajitas. Think of them almost like par-boiled.
