Ok Here is the Gyoza!
- Gyoza Wrappers (or dumpling wrappers, we get them at Target in the veggie/regridgerated section)
- 1/2 head of cabbage finley shredded
- 2 1/2 tsp salt
- 1lb ground pork
- 1/2 bunch of chives (or garlic chives) finley chopped
- 1 1/2 tablespoons of sugar
- 1 tablespoon of good soy sauce
- 2 tsp of garlic salt or garlic powder
- 2-3 cloves (depending on size) of crushed garlic
- 1 tablespoon of Asian sesame oil
- 1 tsp of hot chili oil
- 1 1/2 tablespoons of fresh grated ginger (peeled)
- 1 1/2 tablespoons of Sake
- 1 1/2 tablespoon of potato flour
- Sesame oil, Vegetable oil and water or chicken broth for frying
Place cabbage in a bowl and add salt, allow to sit for a min or two then squeeze all the water out of the cabbage with your hands. (the salt draws the moister out of the cabbage) -
Place the rest of the ingredients into the bowl and mix until well combined (I find mixing with my hands works best)

Place the wrapper down on a cutting board and place approx. 1 tsp of filling in the middle, bring one side of the wrapper to meet the other side, then make 4-5 "Pleats" to close the wrapper. You may need to use a tad of water or chicken broth to help adhere the wrapper.

In a non stick fry pan over med-high heat, place 2 tablespoons of veg. oil, and a couple dashes of sesame oil.

Place gyoza in pan close together and let cook for about 2 min (bottoms should be browned)

Add water or chicken broth to the pan until it reaches half way up the side of the Gyoza. Cover and cook until all liquid has evaporated.
I serve this with my own special sauce, I don't know the measurements as I usually wing it, but here are the ingredients:

Good Soy Sauce (about 2 cups)

Hot Chili oil (just a few dashes)

Rice Wine Vinegar (I would say about 1-2 tablespoons)

2 cloves of fresh garlic crushed

Sesame oil (about 2 tablespoons)

Dice green onion
