Honestly, for Macross, you can probably get away with watching the Do You Remember Love? movie, Plus (movie or OAVs, they're basically identical), Frontier, and Delta. Zero might help, but I watched it as it came out, so that was ... confusing.
Delta really pulls pretty much everything together from original, 0, and Frontier. (Plus is short, self contained, and basically Top Gun with transforming planes.)
