Hello everyone. This is going to be a bit of an odd post. I am looking for recipes. We are putting together a cook book to assist a family in covering the costs of their daughters lung transplant. This young girl has Cystic Fibrosis which is a cause near and dear to my heart since my little one has CF as well ( Read more... )

Hey Five, thanks for helping out. This is someone that I know of through fund raisers and such. But since CF kids aren't supposed to hang out together we have never met her. We are a fairly tight knit group (CF parents that is) because we have all either gone through the same things or will be going through them together.

Your help is greatly appreciated!

OK - Here you go. This is from a B&B in Ashland, Oregon. I have made it successfully MANY times.
MAKE AHEAD FRENCH TOAST
INGREDIENTS
Pancake Syrup
1 loaf of Bread or equivalent odds and ends.
(I like to use a variety of different kinds and have even added leftover hamburger or hotdog buns)
8 oz Cream Cheese
6 Eggs
2 C Milk
1 tsp Vanilla

Grease a 9X13 inch pan. Pour pancake syrup to coat the bottom. Cut or tear up one loaf of bread into bite sized pieces and put in the pan. Cut up the cream cheese into cubes and sprinkle over the bread. Mix eggs, milk and vanilla. Pour over bread/cheese mixture.
Cover and refrigerate overnight. Bake for 35-40 minutes in a 350 degree oven. Serve with additional syrup and fresh fruit if desired. So easy - so good. You can even use skim milk and low fat cream cheese and it turns out great.

1.) Buy a container(s) of your favorite tomato soup. I use either Whole Foods tomato bisque (winter) or their Gazpacho (summer).

2.) Buy a bag of raw frozen shrimp. De-ice as many shrimp as you and yours will eat at this sitting. (The soup is your main dish.) Peel the shrimp and cut into bite-sized pieces.

3.) Put the soup on to warm. Add the shrimp.

4.) Add your favorite salsa until the soup is spiced to your taste.

5.) When heated through, and the shrimp are cooked, serve with salad, crusty bread, and wine.
