If you are making a round center grip like mine, get 5/32" hardwood. Otherwise, anything around 1/4" will do. Home Depot or Lowes. They both have a small rack of pre-cut plywood. They usually carry 24" X 24" pieces of various thickness.

If you are making a larger shield, then consider using a foam core sled. Dunhams, K-Mart, Meijer, Target etc. Try to find a thin one with a plastic facing. Then, when you cut the shield to size, simply cut it on a drastic angle to remove more plastic than foam. This leaves a nice foam edge (you dont want the plastic to be even with the border or it wont pass).

The thickness above should say 5/16". Not 5/32". Oops.

Best material i could find today came down between 1/4" Oak, 1/2" Oak, and 1/2" Birch Ply Boards. I nabbed the 1/2" Birch Ply board in a 2'x2' piece. Think im going to cut it into an octogon shaped shield, Problem tho for me is how do i cut a whole thru it to put the salad bowl in.

1/2" is going to be heavy.

You can get away with 1/4" on a small shield using pine crap plywood. Thinner if you get a nice hardwood ply.

you think I could get away with making it out of 1/4" Oak? Just seemed like if it takes a hit its gonna snap to me

If it is a 22" round blank (leaving room for the foam) you would need to fall on it hard to break it I bet. Not to mention that if you make a handle like I did it strengthens its vertical.

All plywood is different, so you will need to judge it in person. I know the stuff I use worked amazingly well and it was barely thicker than 1/4".
