Some Palestinians saw the supplies coming from Israel as a handout and would rather starve (or let their people starve) than accept the mercy of those they consider their enemy. You could say that it is similar to the land issue in that when the Israelis give territory back to the Palestinians, there is still suicide bombings. Each attack on the Israeli people is responded to with a counter attack and at times a military push that takes more land away from Palestinian control. Some people might ask why the Palestinians would risk losing the land they still have by fighting, while others would say they fight for the land they have already lost.

I didn't think Palestine's "land" was even recognized by Israel as its territory; it was provisionally occupied? From what little I recall, I thought it wasn't just a territorial or tribal battle

Um...no. In that part of the world, with so much religious motivation involved and so many atrocities already committed by both sides...no.
