Aside from Metropolis, Akira, Ninja Scroll, Ghost in the Shell & Princess Mononononoke what are some good anime's?

I like them with good martial arts, action or strange fantasy stuff.

"Spirited Away" and "Howl's Moving Castle" are two particular ones I'd recommend, if you wanted to go with one-shot movies.

For series:
Cowboy Bebop (action)
Hellsing (vampire/action)
Fruits Basket (cute comedy)
His and Her Circumstances (mostly comedy)
Neon Genesis Evangelion (action/psychological)
Ebichu (god, where do I even start?!)
Excel Saga (makes fun of almost every other anime)

I think I have one or two of them, if you'd like to borrow them or watch them together, which I'm always up for doing.
