We have been watching some of the must see movie classics through Netflix. This past week was Dr. Zhivago.

It is billed as a great romance during the Russian revolution. If I had known it was going to be about cheating, I probably wouldn't have even put it on the list. I detest stories about being unfaithful to your partner.

I want to think I have a pretty wide tolerance for how far a character can go before I hit the back button on a story. A kiss or even a grope before the character does a 'no, what am I doing? I must go analyze my feelings.'

But straight out cheating on a spouse and then trying to hold this guy up as good…and I'm not letting the cheating woman off the hook either. sarcasm on - What a love story, poetry was even written. - sarcasm off

This annoys me to no end. Which now that I think about it is why one of my stories has set on my hard drive for a decade.

Moving on. Some years back, Pip was sickish during the holiday season. One evening we had pumpkin pie. Turns out she had a stomach bug and spent the next twelve hours puking pumpkin pie. Needless to say I haven't made pumpkin pie since, no one wants to eat it.

Fast forward to this year and this recipe Pumpkin Cheesecake Bars I'm linking to the original recipe if you want full on Paleo, but we've tried the 'cashew mixture' as substitute for cream cheese in the past and it is not what it is cracked up to be. Plus, I'm a lazy baker and will take the easy recipe every time.

Pumpkin Cheesecake Bars (Pip approved)


Pumpkin Cheesecake Bars

Layer One:
1/2 cup pumpkin puree
1 egg
1/4 cup coconut sugar
1/4 teaspoon sea salt
1 teaspoon cinnamon
1 teaspoon Pumpkin pie spice
2 tablespoons arrowroot flour
1/4 cup coconut flour

Layer Two:
1 - 8 oz package cream cheese, softened
1 egg
2 Tblsp maple syrup

1. Set the oven to 325 F.
2. Combine all of the Layer One ingredients in a mixing bowl using a handheld mixer.
3. Line an 8 x 8 inch baking dish with parchment paper, then press the mixture evenly across the bottom.
4. Mix the cream cheese, egg and maple syrup until smooth.
5. Pour Layer Two over Layer One, and bake for about 30 minutes, or until the middle is slightly set.
6. Allow the bars to cool on the counter, then refrigerate to set completely.

Makes about 9 bars.

ETA: I have never in my life owned an 8x8 pan, but the time worked out fine for a 10x6 pan. Also the parchment paper is not necessary. I buttered my glass dish, but would use the parchment paper if I were going to take these somewhere and needed them to come out looking pretty.

Finally, this recipe for Persian Spiced Dark Hot Chocolate was good even without the saffron.
