Stein's background and history
[Personality]
Stein is a very curious man who believes that everything in the world could be subjected to experimentation, including himself. Part of this is done simply to satisfy his curiosity but it mostly boils down to the observation, investigation and training of the subject. His approach to finding out more about something is dissecting and opening up the subject and exposing it to further study. He even goes as far as to make jokes that he would dissect something or even someone just because they interest or irritate them.
This obsession with dissection has been around since his childhood, and has been referred to countless times. Because of this habit, Spirit has always had to go out of his way to watch over his underclassman, making sure that he will not take things to far, which admittedly was very possible. Being constantly at Stein's side had its cons, one of which being that Stein had subjected Spirit's body to experiments for a long time while his upperclassman was asleep.
It is said that every human has some form of insanity within them whether they are aware of it or not. Stein's insanity stems from his obsession with dissection. However, he is one of he few people who acknowledges such a fact and willingly admits that his insanity has a tendency to take over, especially since the revival of the Kishin and the wave of madness that appeared along with him. This awareness allows him to fight off the urges whenever possible even when it may seem like a losing battle. This is one of the reasons that Shinigami partnered Stein up with Marie after Ashura's escape as her soul wavelength has a calming effect on him. Having her as a partner helps him curb his own insanity from taking over.
Being a man of science, he is very observant of his surroundings and thus allows him to notice things that most people would not. Add that he is a teacher in Shibusen as well, he is willing to partake of whatever knowledge his has learned along the way whether through his own research or from the field.
He also has somewhat sadistic tendencies, seeking some sort of odd joy in seeing people suffer. Most of the time it would only be in jest though, especially when he begins going on about much he likes to cut things open. He openly teases Spirit going as far as saying that he switched the middle toe of Spirit's right foot with his left just to see the other man's reaction. He isn't afraid to dish out harsh truths either if he feels that the person needs to hear it from someone else.
Stein isn't one to follow the rules at all times, especially when it comes to dissecting things. Although people have reprimanded him or asked him to refrain from cutting some things open, it may take some extra persuasion before he is swayed to postpone or fully stop the experiment.
Although Stein does feel the need to protect those that he cares for, such as his students and close friends, he is not one to explicitly reveal his emotions to others. It may seem that he himself in incapable of feeling deep emotions as he does not understand the meaning and purpose in them, much more when he was younger. However he does seem to be able to feel some emotions now that he's grown up even if there are still times when he may not fully understand them.

Stein is considered the most powerful Meister to ever graduate from Shibusen. He is skilled in unarmed close combat and is even able to do so in his chair. He is not only strong but he is able to adapt to the situation quickly and could use a range of weapons to his advantage (such as Spirit's scythe form and Marie's tonfa and hammer forms). He could also understand soul wavelengths better than most, and is able to manipulate his own soul wavelengths as he pleases. He is able to channel his soul wavelength without a need of a weapon.
Like Maka, he is also capable of soul perception which allows him to focus on a person's soul to learn about a person's characteristics, personality and wavelength. he is able to use this in battle to help disrupt his opponent's wavelength to his advantage. He may also pick up other people's souls from a distance.
Soul Menace is another technique Stein is capable of doing in which he drives his own soul wavelength into another person. This can deal heavy damage to his opponent, inside or out. After Soul Menace is performed, Stein could also use his Soul Stitching technique wherein he uses the remaining residue from the previous attack to sew his opponent down to the ground. He is also capable of using it on himself whenever necessary.
Finally, Stein could also perform Witch Hunt. This technique is a soul resonance attack for scythe wielders. This technique is said to have a purifying effect and could even deal damage to immortal opponents.

As someone who's been accused of such a crime, I can't say it's a nice sight or act. But it's unavoidable, especially when there are things like witches and the Kishin to deal with.

The city is where I'm more used to. And there are a lot more possible things to dissect in a city than out in the countryside.

There really was no telling how long the coma would last and now had been as good a time as any for him to seize the chance to experiment on one of his very own students.
Reaching into his lab coat pocket he carefully took out a scalpel, its blade fine and sharp, shining in the light. With one swift move, he threw off the blanket covering Liz and brings the blade down, metal meeting skin. Slowly adding more force, blood begins to drip out of the wound, the grin from earlier contorting itself into something more foul.
This whoever doesn't last long as a loud shriek cuts through the silence. Stein looked up from the girl's exposed stomach to her face, his smile fading into pleasantness as he opened his mouth to speak. "Ah, good evening. Did you have a nice nap?"
Looks like he'll have to postpone this for another day.
